Dear Chancellor:

I am writing on behalf of Vienna Sausage Mfg. Co. concerning the preservation of Maxwell Street. Vienna Beef originated at 1215 South Halsted Street in 1893 where two Austrian-Hungarian immigrants made their sausage in the rear shop and sold it in the retail store front.

The Maxwell Street Market Days was the biggest and liveliest market street of its kind and was sought by eager immigrants from all over the Midwest. Due to its vitality, Maxwell Street was an intricate part of the success of the Vienna Sausage Mfg. Co. One hundred and four years later, Vienna Beef is a $100 million company and our products are available nationwide, as well as in other countries such as Japan, Denmark, and Singapore.

It would be a great disservice to Vienna Beef if the history of our beginnings along with hundreds of other well established companies was not preserved. Maxwell Street deserves a place in American history for our children and our children's children to appreciate. We are a very young country, comparatively speaking, and we should acknowledge and preserve a historical landmark when we have the opportunity to do so.

Thank you for your time.

Kind Regards,

Katie Fitzgerald
